Buffalo Sauce

Basic buffalo-style wing sauce, with a little brown sugar to help it stick better to wings with no breading.

My favorite hot sauce to use is a homemade one using fermented peppers, but you can use whatever you like or have on hand.


  • 3 Tbsp unsalted butter
  • 1 tsp light brown sugar
  • ¼ cup hot sauce (possibly more, to taste)


  1. Melt the butter and brown sugar in a small saucepan over medium heat.
  2. Add hot sauce and stir until combined. Season to taste with salt. Add more hot sauce if desired.
  3. Remove from heat and use as quickly as possible. If the sauce starts to break, heat it back up and stir until it combines again.
